On the second “date” of Christmas…

...we had a coffee date at Starbucks! It was my turn to surprise Mairt but he had a meeting until 9:00pm so I had to think of something quick and easy. We walked Maki & Sashi to the local Starbucks TOGETHER! It was nice to make the extra effort to spend quality time together even with our hectic schedules.

His drink : peppermint hot chocolate with whip cream and chocolate sprinkles

Her drink: soy gingerbread latte and no whip...I just realized they forgot the nutmeg! I usually ask for that too.

On the first “date” of Christmas…

The Vancouver Christmas Market is incredibly adorable. It is made to look like a German Christmas Market complete with mulled wine, pretzels, waffles, entertainment and handmade Christmas ornaments. When you buy the mulled wine you can keep the mug! BONUS!! I must say I'm not sure if I'm a fan of the mulled wine but I would try it again...hopefully in Germany!

It was a great start to our new tradition!

12 “dates” of christmas

I love this idea taken from a beautiful mess & rockstar diaries. Being newly engaged we are already thinking of traditions we would like to carry on until we’re old and wrinkled. This is one of them! Basically we each plan 6 little dates, we write them in a tiny card and seal them in these envelopes. We reveal the date every morning until Christmas Eve!!! CUTEST TRADITION EVER!

Mairt planned today’s date and we just got home so I’ll tell you about it tomorrow!

BRRR! it’s cold in herrrre

1//2//3

I said BRRR!! It’s cold in HERRRRE there must be something is in the atmosphere! No joke, it’s chapstick weather people and there’s no getting around it where I live. I’m swooning over these amazing knits to get me by the cold weather without looking drab and dreary.

PS. This is inspiring me to take up crocheting. I’m seriously picking up a 19mm jumbo hook and bulky yarn today! Wish me luck this might be a disaster…

breakfast cups – upgraded!

I cooked these last weekend to commemorate Ireland’s big win against Estonia in the Euro 2012 playoffs! I made my version of Bacon, Eggs and Toast Cups found here but upgraded the way my fiance would like it!

Need:

3 tablespoons unsalted butter, 6 slices of whole wheat bread, 8 slices of rashers (bacon), 6 eggs, 1 tablespoon olive oil, 1 can baked beans, 1 chopped onion & 5-8 sliced button mushrooms.

Directions:

Preheat the oven 375 degrees. Butter a muffin pan lightly. Using a glass cup (unless you have a circle cookie cutter) cut up your bread slices in the shape of a circle and lay inside the muffin pan. Use any extra pieces of bread to fill up the sides of the muffin pan and patch up any gaps. Butter your bread slices and set aside.

Using a large skillet cook your bacon until slightly crispy. As the bacon cooks you can cook the baked beans. Use a medium saucepan and add the olive oil. When the oil is hot add your sliced onions and cook until caramelized. Then add your baked beans and mushrooms and cook until mushrooms are soft…if you’re up to it I added some bacon fat to the baked beans! YES I DID!

Lay one or two slices of bacon and a good heap of the baked beans in each bread cup. Crack an egg over each cup and bake in the oven until egg whites are cooked. The recipe calls for about 20 minutes. Finally, dig in!

Enjoy the greasy goodness!!

autumn bike ride

Click photos to enlarge.

This weekend Mairt and I spent the whole morning falling in love with our city ALL OVER AGAIN! We rode our bikes around the sea wall of Stanley Park and stopped for brunch at The Calling Public House by the beach. The food was DELISH and I could not get over the interior! It had bold black walls with green and gold accents – AWESOME! Before heading home we had to get our caffeine fix at the ever so trendy The Coffee Bar.

It was a gorgeous sunny morning and I couldn’t stop myself from taking pictures…I have the clicking addiction and instagram is not the cure!

how was your weekend?

diy thumb print engagement invites

Mairt and I sent out these diy invites for our engagement party! we got the idea from pinterest. There’s a real trend for diy weddings at the moment. Something about making it yourself makes it mean so much more PLUS there’s a bonus of making 100 cards for $23.00 WHAT A DEAL!

Most of the materials we had in our apartment already like:

  • printer
  • printer ink
  • black stamp ink

All we needed to buy was:

We downloaded the typewriter font on dafont and typed the message desired. We then printed our message on recycled paper with our printer. The best part was stamping our thumbs into a shape of a heart! Mairt and I spent an evening at a coffee shop stamping our thumbs into the shape of a heart…hehe. It took a few tries but we finally mastered it after 15 attempts…so make EXTRA! I also made white paper labels for the names of people we invited. With some help from a friend we assembled the cards into cute little packages! We tied the labels around each invite with twine to make it more personalized.

The end product:
